Ingredients

  • 1/4 CUP BUTTER (MELTED)
  • 1/2 CUP RED ONION
  • 1/2 CUP RED BELL PEPPER (DICED)
  • 1/2 CUP GREEN BELL PEPPER (DICED)
  • 1 16 OZ JAR EL PINTO ROASTED GREEN CHILE JAR (M)
  • 2 CANS BLUE CRAB MEAT
  • 3 EA WHOLE EGGS
  • 3/4 CUP BREAD CRUMBS
  • 1 CUP PARMESAN CHEESE
  • 1/4 TSP SALT
  • 1/4 TSP BLACK PEPPER

Directions

  1. Take 1 jar of El Pinto Roasted Green Chile, open and drain out juice, set aside
  2. Take medium sauce pan and melt the butter in the pan
  3. Then add the Red Onion, and peppers, saute for 2 minutes to soften up
  4. Remove from heat and refrigerate while the rest of the ingredients are put together
  5. Drain all the juice out of the Blue Crab meat, set aside
  6. In a medium mixing bowl add whole eggs and wisk together
  7. Now add crab, Green Chile, Bread Crumbs, Shredded Parmeasan Cheese, and spices
  8. Mix well and then add cooled pepper and onion mix, continue to mix well
  9. Then take 2 oz balls of the crab mixture and form into 3 inch patties that are 1/4" thick
  10. To cook, take medium size cast iron skillet or similar pan and heat up on medium heat
  11. Add a little cooking oil to the pan, allow to heat up
  12. Take 3 or 4 patties and place in the pan and allow to brown 2-3 minutes, turn over to the other side and brown as well
  13. Remove from heat and serve with El Pinto Remoluade Sauce - see web site for recipe
  14. Garnish with additional chopped chives and fresh lemon wedge
